Valle d’Itria IGP Bianco frizzante

Area of production: Itria Valley.
Grape variety: Verdeca and Bianco d’Alessano.
Maturation period: late September.
Maximum production per hectare: kg. 8.000 grapes.
Vinification and fining: crushing and soft pressing of the mush. Slow must fermentation at controlled temperature (18-20°C). Secondary fermentation takes place via the Charmat Method, in autoclaves.
Colour: straw yellow with greenish reflexes, perlage fine and persistent.
Nose: fresh and intense with pleasant floral scents.
Taste: dry and resolute, markedly lively and persistent.
Serving temperature: 8-10°C.
Serving suggestions: perfect aperitif, or to accompany white meat and fish, pasta and light dishes.
