Area of production: Valle d’Itria.
Grape variety: Fiano as a single variety.
Maturation period: early September.
Maximum production per hectare: kg. 7.000 grapes.
Vinification and fining: crushing of the grapes and maceration with skins for 6/8 hours; soft pressing of the mash. Must fermentation at controlled temperature (16-18°C) and natural clarification through racking.
Colour: straw yellow with intense golden reflexes.
Nose: varietal aroma, complex and very intense, marked by pleasant fruity notes.
Taste: ample and elegant, surprising by its tastiness and acid balance. Persistent aftertaste with floral notes.
Serving temperature: 12-14°C.
Serving suggestions: excellent aperitif, or to suitably accompany asparagus, vegetable soups, mashed legumes and marinated fish.
