Area of production: Apulia, Salento area.
Grape variety: Chardonnay.
Maturation period: mid August.
Maximum production per hectare: kg. 9.000 grapes.
Vinification and fining: crushing and maceration in contact with skins for 6/8 hours, soft pressing of the mush. Fermentation of the must at controlled temperature (18-20°C) and natural clarification by racking.
Colour: straw yellow with intense golden reflexes.
Nose: ample, recalling ripe Mediterranean fruit.
Taste: soft and delicate. With an agreeable freshness supported by an excellent structure.
Serving temperature: 8-10°C.
Serving suggestions: suited to accompany white meat, fish and light dishes.
